Owned & operated by chefs Robert & Marge Chickering, Galisteo Bistro features eclectic, innovative international cuisine known for its open kitchen, quality menu offerings, and attentive service in a casual, comfortable downtown setting. Specialties include Braised Lambshanks, Seafood Pasta Romesco, Chicken Braciole and Crabcakes ala Flamenca, along with an extensive list of tapas, cheese flights and salad courses. Daily specials include fresh fish & seafood, seasonal bistro entrees, and homemade desserts. Whenever possible, ingredients are fresh, local, seasonal and organic.

Chef Robert learned his craft during extensive time spent in ethnic kitchens while performing as the Principal Bass for the Lyric Opera of Chicago, Minneapolis Symphony Orchestra and Santa Fe Opera, plus a season with the Chicago Symphony Orchestra, eventually settling in Santa Fe as owner of Three Cities of Spain and El Gancho Inn & Tennis Club. After leaving Santa Fe in 1980 to pursue business, arts management and bed & breakfast interests in Maine, he and Marge have returned in opening Galisteo Bistro.
